Italian Wedding Soup


Ingredients:
SOUP :
1 1/4 cups petite carrots, sliced
1 1/4 cups yellow onion, chopped
1 1/4 cups celery, chopped
2 tablespoons virgin olive oil

Instructions:
  • First step is In heavily salted water, boil the pasta al dente according to package instructions.
  • And then, In a large heavy pot, saute onion in olive oil over medium/high heat for about 5 minutes or until the onions begin to caramelize. Reduce the heat to low. Add the carrots, celery and herbs to the pot. Saute for another 5 minutes. Add the pesto, lemon juice and broth. Simmer over medium heat for 15-20 minutes.
